The flavour is intensely rich and has a tangy heavyweight bitter-sweet feud at its core. It has achieved a high density providing classic drinks such as The Monkey Gland and The Pink Lady with a fabulously rich and balanced background flavour.

APPLE SYRUP

Jason Crawley’s favourite. Originally created to make incredible tasting Whisky Sours and Old Fashioneds quickly. This liquid is pregnant with organic honey, cardamom, clove, cinnamon, star anise, nutmeg and fresh green apple. Spiced Honey Apple also plays a powerful ‘mulling’ syrup role with red or white wine for hot winter Punches and Toddies.

VANILLA SYRUP

This is our most popular contemporary syrup. Accidently created at Sydney’s now legendary bar ‘Lotus’ by head bartender Alexx Stuart. She left a large pan of organic orange and vanilla beans on gas-heat too long whilst serving customers. When she finally came back to it, it had semi caramelized and turned a little dark but it tasted incredible. Stunning in the Old Fashioned Cocktail, any Collins, Sours and Punch.

The only premium hand-made natural Orgeat Syrup commercially available. This was originally called ‘TIKI Syrup’ thanks to it calling out the central players of flavour in the TIKI universe. The liquid references sweet small pineapples with a gentle high note of almond and subtle marzipan. It has a natural friend in rum and mint but it also harmonises beautifully with Tequila, Bourbon and all white spirits with the addition of a little sparkling water.

The professional choice. The balance between sweet and sour is critical to the larger proportion of handcrafted cocktails so a constant reference to a firm-sweet structure is crucial.

The specific degree of a liquid’s sweetness is measured on a scale called ‘brix’. Our Simple Syrup is intentionally set at 66.1˚ brix. This provides a stable,100% consistent fullness and adds a rewarding brightness to mixed drinks.
